Warming spices with orange zest and maple syrup are a delicious combination!
I used 5 warming spices to create a dish that combines protein and nutritious millet. I hope you like how the flavours work together!
Five Flavours Chicken with Millet Tabbouleh Recipe
Ingredients:
Serves 4
Here are the ingredients for chicken:
2 cups coconut cream
2 tbsp lime juice
Zest from 1 orange
½ tbsp cinnamon
½ cumin
½ tbsp smoked paprika
½ tbsp garlic powder
½ tbsp black pepper
½ tbsp turmeric
½ tbsp Colima sea salt
2 tbsp maple syrup
4 free-range chicken thighs
Ingredients for Millet Tabbouleh:
2 cups cooked millet
1/2 cup minced parsley
1/4 cup minced mint
1/4 cup minced dill
1 tbsp Colima sea salt
2 tbsp extra virgin olive oil
3 tbsp of lemon juice
3 tbsp nutrition yeast
Directions:
Once you have gathered the ingredients above, here is how to combine them:
Marinate chicken thighs: in the bowl combine coconut cream, lime juice, orange zest, maple syrup and the spices from the ingredients list above. Add chicken, and marinate for at least 1 hr or overnight.
Preheat the oven to 380 C.Put chicken on baking sheet. Bake the chicken around 1hr.
Millet Tabbouleh: The best way to cook millet is to first rinse it thoroughly under running water.
Prepare 1 cup millet – 2 and ½ cup of water or bone broth. Bring water or broth to a boil and add millet. Turn the heat to low, cover with a lid, and cook for 25 minutes.
After when millet cools down, combine all ingredients (parsley, mint, dill, sea salt, olive oil, lemon juice, nutrition yeast) in a bowl, and stir well.
Let the flavours melt for 30 minutes.
